Ingredients

  • 1 cup Upvas flour (Swaminarayan Vegetarian fasting flour)
  • 1/2 cup ghee (clarified butter)
  • 1/2 cup jaggery or sugar (adjust to taste)
  • 1/4 cup chopped mixed nuts (cashews, almonds, and pistachios)
  • 1/2 teaspoon cardamom powder
  • A pinch of sendha namak (rock salt)
  • Ghee for greasing the pan
  • Edible silver leaves (optional, for garnish)

Recipe

Here’s a recipe for Farali Sukhdi using Upvas flour, suitable for Ekadashi or Vrat fasting in India. This recipe adheres to Swaminarayan Vegetarian dietary restrictions and is a delightful sweet treat. It’s a simple and quick recipe to make.

Instructions:

  1. Prepare the Pan:

    Grease a plate or a flat tray with a little ghee and set it aside. This will be used to set the Sukhdi.

  2. Roast the Nuts:

    a. Heat a pan on low to medium heat and dry roast the chopped mixed nuts until they turn slightly golden brown and aromatic. Remove them from the pan and set them aside.

  3. Prepare the Sukhdi Mixture:

    a. In the same pan, add 1/2 cup of ghee and let it melt over low heat.

    b. Once the ghee is melted, add the Upvas flour and roast it on low heat while continuously stirring. Keep roasting until the flour turns light golden brown. This should take about 7-10 minutes.

    c. Reduce the heat to the lowest setting and add the jaggery or sugar. Continue to stir continuously.

    d. As the jaggery or sugar melts and combines with the flour, the mixture will become thicker and start leaving the sides of the pan. This should take about 4-5 minutes.

    e. Add the roasted nuts, cardamom powder, and a pinch of sendha namak. Mix well to combine.

  4. Set the Sukhdi:

    a. Quickly transfer the Sukhdi mixture onto the greased plate or tray.

    b. Press it down evenly using the back of a spoon or a flat spatula to create a smooth, compact surface.

    c. If desired, garnish with edible silver leaves for a festive touch.

  5. Cool and Cut:

    a. Allow the Sukhdi to cool down for about 15-20 minutes. It will firm up as it cools.

    b. While it’s still slightly warm, use a sharp knife to cut it into square or diamond-shaped pieces.

  6. Serve:

    a. Once completely cool and firm, carefully remove the Sukhdi pieces from the plate or tray.

    b. Your Farali Sukhdi is ready to be enjoyed during your fasting period. Store any leftovers in an airtight container.
